Here’s a simple and delicious recipe for Veg Sweet Corn Soup:

Ingredients

  • 1 cup sweet corn kernels (fresh, frozen, or canned)
  • 1 small carrot, finely chopped
  • 1/4 cup finely chopped beans
  • 1/4 cup finely chopped cabbage
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 4 cups vegetable broth or water
  • 2 tablespoons cornflour (cornstarch)
  • 1 tablespoon soy sauce
  • 1 teaspoon white vinegar (optional)
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon oil
  • Spring onions or cilantro for garnish

Instructions

  1. Preparation of Corn Paste:
    • If using fresh or frozen corn, blend half of the corn kernels with a little water to make a coarse paste. If using canned corn, rinse well before blending.

    Sautéing Vegetables:

      • Heat oil in a large pot over medium heat.
      • Add the minced ginger, garlic, and chopped onions. Sauté until the onions turn translucent.

      2. Cooking Vegetables:

        • Add the finely chopped carrot, beans, and cabbage. Sauté for 2-3 minutes.

        3. Adding Corn:

          • Add the remaining corn kernels and the corn paste to the pot. Stir well.

          4. Adding Liquid:

            • Pour in the vegetable broth or water. Stir to combine. Bring the mixture to a boil.

            5. Thickening the Soup:

              • In a small bowl, mix the cornflour with 3-4 tablespoons of water to make a slurry.
              • Gradually add this slurry to the boiling soup, stirring continuously to avoid lumps. Cook for another 3-4 minutes until the soup thickens.

              6. Seasoning:

                • Add soy sauce, salt, and black pepper to taste. If using, add the white vinegar for a slight tanginess.

                7. Final Touch:

                  • Simmer for another 2-3 minutes to let all the flavours meld together.
                  • Adjust the consistency by adding more broth or water if necessary.

                  8. Serving:

                    • Garnish with chopped spring onions or cilantro.
                    • Serve hot.
