Here’s a tasty recipe for Veg Seekh Kebabs:

Ingredients:

  • 2 cups grated paneer (Indian cottage cheese)
  • 1 cup boiled and mashed potatoes
  • 1/2 cup finely chopped mixed bell peppers (red, green, yellow)
  • 1/2 cup finely chopped onions
  • 2-3 green chillies, finely chopped
  • 2 tablespoons chopped coriander leaves
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon chaat masala
  • Salt to taste
  • 2 tablespoons cornflour or chickpea flour (besan)
  • Bamboo or metal skewers
  • Oil for grilling

Instructions:

  1. In a large mixing bowl, combine grated paneer, mashed potatoes, chopped bell peppers, chopped onions, green chillies, chopped coriander leaves, ginger-garlic paste, garam masala, cumin powder, chaat masala, and salt. Mix well until all ingredients are evenly distributed.
  2. Add cornflour or chickpea flour to the mixture to bind it together. Mix well until the mixture becomes firm and pliable.
  3. Take a small portion of the mixture and shape it onto the skewers, forming elongated kebabs.
  4. Preheat your grill or barbecue to medium-high heat.
  5. Brush the kebabs with oil on all sides to prevent sticking and promote even cooking.
  6. Place the kebabs on the grill and cook for 10-12 minutes, turning occasionally, until they are golden brown and slightly charred on the outside.
  7. Once cooked through, remove the kebabs from the grill and serve hot with mint chutney, onion rings, and lemon wedges.
