Here’s a simple recipe for Hara Bhara Kebabs:

Ingredients:

  • 2 cups boiled and mashed potatoes
  • 1 cup boiled and mashed green peas
  • 1 cup finely chopped spinach
  • 2-3 green chillies, finely chopped
  • 1-inch piece of ginger, grated
  • 2-3 garlic cloves, minced
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon chaat masala
  • Salt to taste
  • 1 tablespoon cornflour or chickpea flour (besan)
  • Bread crumbs for coating
  • Oil for shallow frying

Instructions:

  1. In a mixing bowl, combine mashed potatoes, green peas, chopped spinach, green chillies, grated ginger, minced garlic, garam masala, cumin powder, chaat masala, and salt. Mix well until everything is combined evenly.
  2. Add cornflour or chickpea flour to the mixture to bind it together. Mix well.
  3. Take a small portion of the mixture and shape it into small, flat round kebabs.
  4. Roll each kebab in bread crumbs, ensuring they are coated evenly.
  5. Heat oil in a shallow frying pan over medium heat.
  6. Once the oil is hot, place the kebabs in the pan and shallow fry them until they turn golden brown and crispy on both sides.
  7. Once done, remove the kebabs from the pan and place them on a plate lined with paper towels to drain excess oil.
  8. Serve the Hara Bhara Kebabs hot with mint chutney or ketchup.
