Here’s a delicious recipe for Veg Hakka Soup:

Ingredients:

  • 1 tablespoon oil
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon finely chopped ginger
  • 1 small onion, finely chopped
  • 1 small carrot, finely chopped
  • 1/2 cup finely chopped cabbage
  • 1/2 cup finely chopped bell peppers (red, yellow, or green)
  • 1/2 cup finely chopped mushrooms
  • 1/4 cup finely chopped beans
  • 1/4 cup finely chopped spring onions (white and green parts separated)
  • 4 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons cornflour mixed with 4 tablespoons water (slurry)
  • 1 tablespoon finely chopped fresh cilantro (optional, for garnish)
  • 1 tablespoon finely chopped spring onion greens (for garnish)

Instructions:

1. Prepare the Aromatics:

    • Heat the oil in a large pot over medium heat.
    • Add the finely chopped garlic and ginger. Sauté until fragrant and slightly golden.

    2. Sauté the Vegetables:

      • Add the finely chopped onion and sauté until it becomes translucent.
      • Add the finely chopped carrot, cabbage, bell peppers, mushrooms, beans, and the white parts of the spring onions.
      • Stir-fry the vegetables for 5-7 minutes until they are slightly tender but still crisp.

      3. Add Broth and Seasonings:

        • Pour in the vegetable broth and bring the mixture to a boil.
        • Add soy sauce, vinegar, black pepper, and salt to taste.
        • Lower the heat and let the soup simmer for about 10 minutes.

        4. Thicken the Soup:

          • Stir the cornflour slurry and slowly add it to the soup while stirring continuously.
          • Let the soup simmer for another 2-3 minutes until it thickens to your desired consistency.

          5. Final Touches:

            • Add the chopped green parts of the spring onions.
            • Adjust seasoning if needed.

            6. Serve:

              • Garnish with finely chopped fresh cilantro and spring onion greens.
