Ingredients:
For the marinade:
- 250 grams button mushrooms, cleaned and halved
- 1/2 cup yoghurt (Greek yoghurt works well)
- 2 tablespoons tandoori masala powder
- 1 tablespoon ginger-garlic paste
- 1 tablespoon lemon juice
- 1 teaspoon paprika (for colour)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Salt to taste
- 1 tablespoon vegetable oil
For garnish:
- Chopped coriander leaves
- Lemon wedges
Instructions:
- In a large bowl, prepare the marinade by mixing yoghurt, tandoori masala powder, ginger-garlic paste, lemon juice, paprika, turmeric powder, cumin powder, coriander powder, salt, and vegetable oil.
- Add the cleaned and halved mushrooms to the marinade. Toss well to coat the mushrooms evenly with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or preferably for 2-3 hours for the best flavour.
- Preheat your oven to 400°F (200°C). If you have a grill, you can also preheat it to medium-high heat.
- Thread the marinated mushrooms onto skewers. If using wooden skewers, make sure to soak them in water for about 30 minutes before threading the mushrooms to prevent them from burning.
- Place the mushroom skewers on a baking tray lined with aluminium foil or parchment paper. If using a grill, place the skewers directly on the grill grates.
- Bake or grill the mushrooms for about 15-20 minutes, turning them occasionally, until they are cooked through and slightly charred around the edges.
- Once cooked, remove the mushroom skewers from the oven or grill.
- Garnish the Tandoori Mushrooms with chopped coriander leaves and serve hot with lemon wedges on the side.
