Prawn Salt and Pepper Recipe
Ingredients:
For the Prawns:
- 500 grams (about 1 pound) large prawns, peeled and deveined
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- Vegetable oil for frying
For the Stir-Fry:
- 2 tablespoons vegetable oil
- 3-4 cloves garlic, minced
- 2-3 fresh red or green chillies, thinly sliced
- 1 small onion, finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 teaspoon sugar
- 1/2 teaspoon Chinese five-spice powder (optional)
- 2-3 green onions, chopped
- Fresh cilantro for garnish (optional)
Instructions:
1. Prepare the Prawns:
- Pat the prawns dry with paper towels.
- In a bowl, mix the prawns with cornstarch, salt, and white pepper until they are evenly coated.
2. Fry the Prawns:
- Heat enough vegetable oil in a large frying pan or wok over medium-high heat to shallow fry the prawns.
- Once the oil is hot (about 350°F or 175°C), carefully add the prawns in batches to avoid overcrowding. Fry each batch for about 2-3 minutes, or until the prawns are golden and crispy.
- Use a slotted spoon to transfer the fried prawns to a plate lined with paper towels to drain any excess oil. Repeat with the remaining prawns.
3. Stir-Fry the Aromatics:
- In a clean wok or frying pan, heat 2 tablespoons of vegetable oil over medium-high heat.
- Add the minced garlic, sliced chillies, and chopped onion. Stir-fry for about 1-2 minutes, or until the garlic is fragrant and the onions start to soften.
4. Combine and Season:
- Add the fried prawns back into the wok with the aromatics.
- Sprinkle with salt, white pepper, sugar, and Chinese five-spice powder (if using). Toss everything together until the prawns are well-coated with the seasoning and heated through.
5. Finish and Serve:
- Add the chopped green onions and give everything a final toss.
- Transfer the prawn salt and pepper to a serving plate.
- Garnish with fresh cilantro if desired.
