Here’s a simple recipe for Papdi Paneer:
Ingredients:
- 200 grams paneer (Indian cottage cheese), cut into cubes
- 1 cup papdi (crispy fried Indian snack)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 green chilly, finely chopped (optional)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and chopped green chilli (if using). Sauté for a minute until the raw smell disappears.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add turmeric powder, coriander powder, cumin powder, garam masala, and salt. Mix well and cook for another minute.
- Add paneer cubes to the masala and gently mix until the paneer is well coated with the spices. Be careful not to break the paneer cubes.
- Crumble the papdi into small pieces and add them to the paneer mixture. Mix gently.
- Cook for 2-3 minutes, allowing the flavours to blend together.
- Garnish with fresh coriander leaves and serve hot.
