Here’s a simple recipe for Papdi Paneer:

Ingredients:

  • 200 grams paneer (Indian cottage cheese), cut into cubes
  • 1 cup papdi (crispy fried Indian snack)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 green chilly, finely chopped (optional)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn golden brown.
  2. Add ginger-garlic paste and chopped green chilli (if using). Sauté for a minute until the raw smell disappears.
  3. Add chopped tomatoes and cook until they turn soft and mushy.
  4. Add turmeric powder, coriander powder, cumin powder, garam masala, and salt. Mix well and cook for another minute.
  5. Add paneer cubes to the masala and gently mix until the paneer is well coated with the spices. Be careful not to break the paneer cubes.
  6. Crumble the papdi into small pieces and add them to the paneer mixture. Mix gently.
  7. Cook for 2-3 minutes, allowing the flavours to blend together.
  8. Garnish with fresh coriander leaves and serve hot.
