Here’s a classic recipe for Paneer Tikka:

Ingredients:

  • 250 grams paneer (Indian cottage cheese), cut into cubes
  • 1 bell pepper (capsicum), cut into chunks
  • 1 onion, cut into chunks
  • 1 tomato, cut into chunks (optional)
  • 1/2 cup yoghurt (curd)
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon red chilli powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Skewers (if using bamboo skewers, soak them in water for 30 minutes before using)

Instructions:

  1. In a mixing bowl, combine yoghurt, ginger-garlic paste, lemon juice, red chilli powder, turmeric powder, cumin powder, coriander powder, garam masala, and salt. Mix well to make the marinade.
  2. Add paneer cubes, bell pepper chunks, onion chunks, and tomato chunks (if using) to the marinade. Coat the vegetables and paneer evenly with the marinade. Let it marinate for at least 30 minutes to 1 hour in the refrigerator.
  3. Preheat the oven to 200°C (400°F) or prepare a grill.
  4. Thread the marinated paneer cubes and vegetables onto skewers, alternating between paneer, bell pepper, onion, and tomato.
  5. Brush the skewers with oil and place them on a baking tray lined with aluminium foil or directly on the grill.
  6. Bake or grill the skewers for about 15-20 minutes, turning them occasionally, until the paneer and vegetables are lightly charred and cooked through.
  7. Remove the skewers from the oven or grill and let them cool for a few minutes.
  8. Serve Paneer Tikka hot with mint chutney, onion slices, and lemon wedges on the side.
