Ingredients:

  • 200 grams paneer (Indian cottage cheese), cut into cubes or strips
  • 2 tablespoons all-purpose flour (maida)
  • 2 tablespoons cornflour
  • 1 tablespoon rice flour
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1 tablespoon lemon juice
  • Salt to taste
  • Oil for deep frying
  • Curry leaves for garnish (optional)
  • Finely chopped coriander leaves for garnish

For the batter:

  • 3 tablespoons yogurt (curd)
  • 1 tablespoon water (adjust as needed to make a thick batter)

Instructions:

  1. In a mixing bowl, combine all-purpose flour, cornflour, rice flour, ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt. Mix well to form a smooth paste.
  2. Add the paneer cubes to the paste and gently toss until they are evenly coated. Let the paneer marinate for about 15-20 minutes.
  3. In another bowl, prepare the batter by mixing yogurt and water until smooth. The batter should be thick enough to coat the paneer pieces.
  4. Heat oil in a deep frying pan or kadhai over medium-high heat.
  5. Dip each marinated paneer piece into the batter, ensuring it’s well coated, and carefully drop it into the hot oil. Fry in batches to avoid overcrowding the pan.
  6. Fry the paneer pieces until they turn golden brown and crispy. Remove them from the oil using a slotted spoon and drain excess oil on a paper towel.
  7. Garnish with curry leaves (if using) and finely chopped coriander leaves.
  8. Serve Paneer 65 hot with ketchup or any dipping sauce of your choice.

Enjoy your crispy and flavorful Paneer 65!
