Mutton Sheek Kebab Recipe
Ingredients:
- 500 grams (about 1 pound) minced mutton (lamb)
- 1 medium onion, finely chopped
- 2-3 green chillies, finely chopped
- 1/4 cup fresh coriander leaves, finely chopped
- 1/4 cup fresh mint leaves, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 tablespoon garam masala powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon red chilli powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon black pepper powder
- 1/2 teaspoon chaat masala (optional)
- 1 tablespoon lemon juice
- Salt to taste
- 1 egg (optional, for binding)
- 2-3 tablespoons breadcrumbs (if needed for binding)
- 2 tablespoons oil (for brushing or frying)
- Skewers (wooden or metal)
Instructions:
1. Prepare the Mince:
- In a large mixing bowl, combine the minced mutton with the finely chopped onion, green chillies, coriander leaves, mint leaves, and ginger-garlic paste.
2. Season and Bind:
- Add the garam masala powder, ground cumin, ground coriander, red chilli powder, turmeric powder, black pepper powder, chaat masala (if using), lemon juice, and salt.
- Mix everything thoroughly. If the mixture is too loose, you can add an egg and breadcrumbs to help bind it. The mixture should be firm enough to hold onto the skewers.
3. Shape the Kebabs:
- Take a small portion of the mixture and shape it around a skewer, pressing and moulding it with your hands to form a cylindrical shape. Repeat with the remaining mixture.
4. Cook the Kebabs:
- Grilling Method: Preheat your grill to medium-high heat. Brush the kebabs with oil and grill them for about 8-10 minutes, turning occasionally, until they are cooked through and have a nice char.
- Oven Method: Preheat your oven to 200°C (400°F). Place the skewered kebabs on a baking sheet lined with aluminium foil. Brush them with oil and bake for about 15-20 minutes, turning halfway through, until cooked through.
- Pan-Frying Method: Heat a grill pan or a non-stick frying pan over medium-high heat. Brush the kebabs with oil and cook them for about 8-10 minutes, turning occasionally, until they are cooked through and have a nice char.
5. Serve:
- Remove the kebabs from the skewers and transfer them to a serving plate.
- Serve hot with naan or paratha, a side of mint chutney, lemon wedges, and sliced onions.
