Here’s a recipe for Mushroom 65, a delicious and spicy Indian appetizer:
Ingredients:
- 250 grams button mushrooms, cleaned and halved
- 1/2 cup all-purpose flour (maida)
- 2 tablespoons cornstarch
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chilli powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1 tablespoon soy sauce
- 1 tablespoon yogurt
- Salt to taste
- Oil for deep frying
- Curry leaves for garnish (optional)
- Lemon wedges for serving
For the batter:
- 3/4 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
Instructions:
- In a large bowl, prepare the batter by mixing all-purpose flour, cornstarch, ginger-garlic paste, red chilli powder, turmeric powder, garam masala, coriander powder, soy sauce, yoghurt, and salt. Gradually add water and lemon juice to make a smooth batter. The batter should be thick enough to coat the mushrooms.
- Add the cleaned and halved mushrooms to the batter. Make sure each mushroom is well coated with the batter.
- Heat oil for deep frying in a heavy-bottomed pan or kadai over medium-high heat.
- Once the oil is hot, carefully drop the battered mushrooms into the oil, making sure not to overcrowd the pan. Fry the mushrooms in batches if necessary.
- Fry the mushrooms until they turn golden brown and crispy, stirring occasionally, about 3-4 minutes.
- Using a slotted spoon, remove the fried mushrooms from the oil and drain them on paper towels to remove excess oil.
- Garnish the Mushroom 65 with fresh curry leaves for added flavour (optional).
- Serve hot with lemon wedges and your favourite dipping sauce.
