Here’s a recipe for Mushroom 65, a delicious and spicy Indian appetizer:

Ingredients:

  • 250 grams button mushrooms, cleaned and halved
  • 1/2 cup all-purpose flour (maida)
  • 2 tablespoons cornstarch
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 tablespoon soy sauce
  • 1 tablespoon yogurt
  • Salt to taste
  • Oil for deep frying
  • Curry leaves for garnish (optional)
  • Lemon wedges for serving

For the batter:

  • 3/4 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions:

  1. In a large bowl, prepare the batter by mixing all-purpose flour, cornstarch, ginger-garlic paste, red chilli powder, turmeric powder, garam masala, coriander powder, soy sauce, yoghurt, and salt. Gradually add water and lemon juice to make a smooth batter. The batter should be thick enough to coat the mushrooms.
  2. Add the cleaned and halved mushrooms to the batter. Make sure each mushroom is well coated with the batter.
  3. Heat oil for deep frying in a heavy-bottomed pan or kadai over medium-high heat.
  4. Once the oil is hot, carefully drop the battered mushrooms into the oil, making sure not to overcrowd the pan. Fry the mushrooms in batches if necessary.
  5. Fry the mushrooms until they turn golden brown and crispy, stirring occasionally, about 3-4 minutes.
  6. Using a slotted spoon, remove the fried mushrooms from the oil and drain them on paper towels to remove excess oil.
  7. Garnish the Mushroom 65 with fresh curry leaves for added flavour (optional).
  8. Serve hot with lemon wedges and your favourite dipping sauce.
