Ingredients:
- 4 medium-sized potatoes, peeled and cut into thin strips or wedges
- 2 tablespoons cornstarch
- 2 tablespoons all-purpose flour
- 1 teaspoon garlic powder

- Salt to taste
- Oil for deep frying
- 2 tablespoons oil
- 4-5 cloves garlic, minced

- 2 tablespoons soy sauce
- 1 tablespoon tomato ketchup
- 1 tablespoon chilly sauce (adjust according to spice preference)
- 1 tablespoon vinegar
- 1 teaspoon sugar
- 1 tablespoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)
- Spring onions, chopped, for garnish
Instructions:
- In a bowl, mix together cornstarch, all-purpose flour, garlic powder, ginger powder, and salt. Add the potato strips or wedges to the bowl and toss until they are evenly coated with the flour mixture.
- Heat oil for deep frying in a pan or wok over medium-high heat. Once the oil is hot, carefully add the coated potato strips or wedges in batches, making sure not to overcrowd the pan. Fry until they are golden brown and crispy, about 5-6 minutes per batch. Remove with a slotted spoon and drain on paper towels.
- In a separate pan or wok, heat 2 tablespoons of oil over medium heat. Add minced garlic and sliced green chilies. Sauté for a minute until fragrant.
- Add thinly sliced onion and bell pepper to the pan. Stir-fry for 2-3 minutes until they are slightly softened but still crisp.
- In a small bowl, mix together soy sauce, tomato ketchup, chili sauce, vinegar, and sugar. Pour this sauce mixture over the vegetables in the pan.
