Chicken Tai Pai Recipe

Ingredients:

For the Chicken Marinade:

  • 500 grams (about 1 pound) boneless chicken breast or thighs, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch

For the Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 1/4 cup chicken broth or water

For the Stir-Fry:

  • 2 tablespoons vegetable oil
  • 3-4 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 medium onion, sliced
  • 1 cup broccoli florets
  • 1 cup snow peas or sugar snap peas
  • 1/2 cup carrots, julienned
  • 2-3 green onions, chopped
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Instructions:

1. Marinate the Chicken:

        • In a bowl, mix the chicken pieces with soy sauce and cornstarch. Let it marinate for at least 15-20 minutes while you prepare the other ingredients.

        2. Prepare the Sauce:

          • In a small bowl, combine soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar, sesame oil, and chicken broth or water. Stir well to mix and set aside.

          3. Cook the Chicken:

            • Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
            • Add the marinated chicken pieces and stir-fry until they are fully cooked and slightly browned. Remove the chicken from the wok and set aside.

            4. Stir-fry the Vegetables:

              • In the same wok, add the remaining 1 tablespoon of vegetable oil.
              • Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
              • Add the bell peppers, onion, broccoli, snow peas, and carrots. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

              5. Combine and Cook:

                • Return the cooked chicken to the wok with the vegetables.
                • Pour in the prepared sauce and toss everything together to coat evenly.
                • If you prefer a thicker sauce, stir in the cornstarch mixture and cook for another minute until the sauce thickens.

                6. Finish and Serve:

                  • Add chopped green onions and give everything a final toss.
                  • Serve hot with steamed rice or noodles.
