For the Chicken Marinade:
- 500 grams (about 1 pound) boneless chicken breast or thighs, cut into bite-sized pieces
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
For the Sauce:
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 1/4 cup chicken broth or water
For the Stir-Fry:
- 2 tablespoons vegetable oil
- 3-4 cloves garlic, minced
- 1-inch piece ginger, minced
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1 medium onion, sliced
- 1 cup broccoli florets
- 1 cup snow peas or sugar snap peas
- 1/2 cup carrots, julienned
- 2-3 green onions, chopped
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions:
1. Marinate the Chicken:
- In a bowl, mix the chicken pieces with soy sauce and cornstarch. Let it marinate for at least 15-20 minutes while you prepare the other ingredients.
2. Prepare the Sauce:
- In a small bowl, combine soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar, sesame oil, and chicken broth or water. Stir well to mix and set aside.
3. Cook the Chicken:
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Add the marinated chicken pieces and stir-fry until they are fully cooked and slightly browned. Remove the chicken from the wok and set aside.
4. Stir-fry the Vegetables:
- In the same wok, add the remaining 1 tablespoon of vegetable oil.
- Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the bell peppers, onion, broccoli, snow peas, and carrots. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
5. Combine and Cook:
- Return the cooked chicken to the wok with the vegetables.
- Pour in the prepared sauce and toss everything together to coat evenly.
- If you prefer a thicker sauce, stir in the cornstarch mixture and cook for another minute until the sauce thickens.
6. Finish and Serve:
- Add chopped green onions and give everything a final toss.
- Serve hot with steamed rice or noodles.
