Chicken Manchow Soup Recipe

Ingredients:

For the Soup:

  • 200 grams boneless chicken, finely chopped or shredded
  • 1 tablespoon oil
  • 1 teaspoon garlic, finely chopped
  • 1 teaspoon ginger, finely chopped
  • 1/2 cup onion, finely chopped
  • 1/4 cup spring onions, finely chopped (white and green parts separated)
  • 1/4 cup carrots, finely chopped
  • 1/4 cup cabbage, finely chopped
  • 1/4 cup capsicum (bell pepper), finely chopped
  • 1/4 cup mushrooms, finely chopped (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon chilli sauce
  • 1 teaspoon black pepper powder
  • Salt to taste
  • 4 cups chicken stock or water
  • 2 tablespoons cornstarch mixed with 3 tablespoons water to form a slurry
  • 1 egg, beaten (optional)

For the Crispy Noodles:

  • 1 cup cooked noodles
  • Oil for frying

Instructions:

1. Prepare the Crispy Noodles:

  • Heat oil in a deep frying pan.
  • Fry the cooked noodles until they are golden and crispy.
  • Remove and drain on paper towels. Set aside.

2. Making the Soup:

  • Heat oil in a large pot over medium heat.
  • Add garlic and ginger, and sauté for a minute until fragrant.
  • Add the chopped onions and the white part of the spring onions, and sauté until translucent.
  • Add the chicken and cook until it turns white and is almost cooked through.
  • Add the carrots, cabbage, capsicum, and mushrooms (if using), and sauté for 2-3 minutes.
  • Pour in the chicken stock or water and bring it to a boil.
  • Add soy sauce, vinegar, chilli sauce, black pepper powder, and salt. Stir well.
  • Reduce the heat and let the soup simmer for 5-7 minutes.
  • Add the cornstarch slurry to the soup, stirring continuously to avoid lumps. This will thicken the soup.
  • If using, slowly pour in the beaten egg while stirring the soup continuously to create egg ribbons.
  • Simmer for another 2-3 minutes until the soup is thickened to your liking.
  • Stir in the green part of the spring onions and turn off the heat.

3. Serving:

  • Ladle the soup into bowls.
  • Top with crispy noodles just before serving to maintain their crunch.
