Chicken Manchow Soup Recipe
Ingredients:
For the Soup:
- 200 grams boneless chicken, finely chopped or shredded
- 1 tablespoon oil
- 1 teaspoon garlic, finely chopped
- 1 teaspoon ginger, finely chopped
- 1/2 cup onion, finely chopped
- 1/4 cup spring onions, finely chopped (white and green parts separated)
- 1/4 cup carrots, finely chopped
- 1/4 cup cabbage, finely chopped
- 1/4 cup capsicum (bell pepper), finely chopped
- 1/4 cup mushrooms, finely chopped (optional)
- 2 tablespoons soy sauce
- 1 tablespoon vinegar
- 1 tablespoon chilli sauce
- 1 teaspoon black pepper powder
- Salt to taste
- 4 cups chicken stock or water
- 2 tablespoons cornstarch mixed with 3 tablespoons water to form a slurry
- 1 egg, beaten (optional)
For the Crispy Noodles:
- 1 cup cooked noodles
- Oil for frying
Instructions:
1. Prepare the Crispy Noodles:
- Heat oil in a deep frying pan.
- Fry the cooked noodles until they are golden and crispy.
- Remove and drain on paper towels. Set aside.
2. Making the Soup:
- Heat oil in a large pot over medium heat.
- Add garlic and ginger, and sauté for a minute until fragrant.
- Add the chopped onions and the white part of the spring onions, and sauté until translucent.
- Add the chicken and cook until it turns white and is almost cooked through.
- Add the carrots, cabbage, capsicum, and mushrooms (if using), and sauté for 2-3 minutes.
- Pour in the chicken stock or water and bring it to a boil.
- Add soy sauce, vinegar, chilli sauce, black pepper powder, and salt. Stir well.
- Reduce the heat and let the soup simmer for 5-7 minutes.
- Add the cornstarch slurry to the soup, stirring continuously to avoid lumps. This will thicken the soup.
- If using, slowly pour in the beaten egg while stirring the soup continuously to create egg ribbons.
- Simmer for another 2-3 minutes until the soup is thickened to your liking.
- Stir in the green part of the spring onions and turn off the heat.
3. Serving:
- Ladle the soup into bowls.
- Top with crispy noodles just before serving to maintain their crunch.
